The Hearty Boys rose to fame on the Next Food Network Star. At their new restaurant in Chicaco, SpritzBurger, they’ve created a signature burger inspired by Beekman 1802!


1 lb Ground Lamb
1 lb Ground Beef
4 – 6 oz fresh chevre
1 cup Beekman Blaak Onion Jam (purchase here, or recipe here.)
1 teaspoon salt
1 teaspoon ground pepper
Brioche Bun (or soft hamburger bun.)
Mesclun Greens
Heirloom Tomatoes

In large mixing bowl, use hands to loosely combine beef, lamb, salt & pepper. (Do not over mix or hamburgers will not remain juicy.) Gently shape into 6 – 8 patties, and make depression in center of patty with thumb. Grill over hot coals, for approximately 4 minutes per side until interior of burger reads 150F for medium rare, or 160F for medium. During last minute of cooking, add a dollop of chèvre on top of each patty. (Do not let it melt off.)

Toast buns, cut side down, briefly on grill. Top chèvre burger with 1 tablespoon of Blaak Onion Jam, & heirloom tomato slice.

I make a similar burger with lamb and bison. It is to die for…I do mine with muenster, but next time curves and Blaak jam it is!

Can’t wait for summer.
