A sweet and soothing way to warm your bones

Ingredients

•1 quart apple cider

•1 cinnamon stick, halved lengthwise

•1 (2-inch) piece fresh ginger, thinly sliced

•Zest strips from ½ orange

•8 whole cloves

•5 allspice berries

•3 Tbs. maple syrup (preferably Grade B)

Instructions

In a medium saucepan, combine the cider, cinnamon, ginger, orange zest, cloves and allspice. Bring the mixture to a boil, reduce to a simmer, cover and cook for 5 minutes. Strain the mixture and discard the spices. Return the mixture to a gentle simmer and stir in the maple syrup. Serve warm.

VARIATION: For a “grown-up” mulled cider, add ¼ cup applejack, dark rum or bourbon to the cider after it has been heated.
