Ingredients (serves 8)

1½ cups white sugar
Two pinches salt
2/3 cup boiling water
7 cups milk
1 ¼ cups bittersweet chocolate
chips (60% cacao)
1½ teaspoon pure vanilla extract
1 cup half-and-half

Combine the sugar, salt, and water in a saucepan, and bring to a gentle boil while you stir. Simmer and stir for about 2 minutes. Stir in milk and chocolate, and heat until very hot but not boiling. Remove from heat and add vanilla. Divide among 8 mugs. Add the half-and-half to the mugs of cocoa to cool it to drinking temperature.
