These fruit roll-ups with “hidden” love notes are as fun to make as they are to give. (Plus they  have a little liqueur in them for extra naughtiness.) Recipe below slide show.

Love Note Fruit Roll-ups (with booze!)

Summary

Fruit Roll-ups are nutritious and a great way to preserve extra fruit, but when you add a love note (or riddle, or fortune, or joke) they become even more fun.

Ingredients:

2 pints of raspberries
3 Tablespoons Raspberry Liqueur (Or any Kirsch, Grand Marnier, Cointreau. For non-alcoholic roll-ups, substitute water or apple juice.)
¾ cup of honey

Directions:

Place all ingredients in blender or food processor. Puree completely at high speed. Mixture should resemble a smoothie. If too thick to pour, add water or apple juice to thin, and puree again.

To remove raspberry seeds (optional) pass through wire sieve, using rubber spatula to press through. Return pulp to blender to combine one more time.

Line a half baking sheet with parchment paper, silicone mat, or smooth plastic. Evenly pour fruit mixture onto parchment liner in rough rectangle shape, leaving about ½ inch clear from edges. Spread mixture as evenly as possible across parchment liner.

Use either oven or food dehydrator to dry:

Oven: Place in your oven on the lowest setting possible. Must be 170F or below. Drying process will take from 6-10 hours depending on thickness of fruit leather and other conditions.

Dehydrator: Set dehydrator to 135-140F. Place baking sheet in dehydrator. Process will take from 5-8 hours.

Fruit leather is ready to be rolled and cut when edges peel away easily from parchment paper, and the center is no longer tacky.

While fruit leather is drying, print out or hand write love note, messages, riddles or jokes on sheet of parchment paper cut to same size as half baking sheet. Leave at least 1½ inch margins and 1½ inches between messages. (See above photo.)

Cut a third sheet of parchment paper to same size. Leave blank. This is the layer between the fruit leather and the printed quotes.

Once fruit leather is dry, remove it from original parchment sheet. (Discard original sheet.) Set it on top of clean parchment sheet. Set both layers on top of quotation sheet. Trim away edges neatly to form rectangle of the three layers. You may use paper clips to keep layers from slipping. Flip upside down. Cut into individual strips, being careful to cut between lines of quotations.

Roll strips, tie with decorative bow.
