Sometimes we have a salty, crunchy craving, but a satisfying snack doesn’t have to be unhealthy. Kale is the perfect snack for fall, winter and early spring since, if slightly protected, it continues to grow in the garden throughout the cold weather.
Kale Chips
Ingredients:
1 T olive oil
one bunch of kale
your creativity
Instructions:
1. Choosing the largest leaves, gently tear the leaves from the stems
2. Place leaves in a large bowl and gently massage the leaves with olive oil until leaves are fully coated
3. Now the fun part. Choose a topping that will meet your craving. Simply salty? Sprinkle in sea salt (and maybe a dash of vinegar). Cheese please? Grate some parmesan or other hard cheese. BBQ chips are your downfall? Sprinkle a little taco seasoning. And red pepper flakes are always a favorite with us.
4. Pre-heat oven to 400 degrees. Place leaves flat on a cookie sheet. Bake for 10-12 minutes or until edges of leaves just start to blacken. Check frequently. Depending on the tenderness of the leaves, they may crisp in as little as 8 minutes.
5. Remove from oven and transfer to a paper towel to absorb any excess oil.

Finely grated lemon zest added to the oil before tossing the kale is awesome. OR try a squeeze of fresh lemon juice after cooking. Sprinkle with sea salt, and you’re in for a treat.
Absolutely try flavoring the kale with fresh garlic. I use a fine grater to grate a good-sized clove into a bowl, add the oil then the kale.
There’s always room for garlic.
We love Kale! This was really fun to make and healthy!
Thanks!

I love using cajun seasonings with mine for a spicy, crispy snack! I’ve been meaning to try with sea salt and vinegar for a while, and will have to try the taco seasonings, too!
So good thanks.
I love them spicy! And I prefer to cook them low and slow…275 for 20 mins works great with no scorching.
I love making these. I sprinkle mine with Greek Seasoning
My favorite kale chip topping is Weber’s N’awlins.
Going to try this recipe today. Bought my kale and am on a low sodium diet, so I’m going to add some Mrs. Dashs seasoning, don’t know which one yet.

toss them in a spicy miso vinaigrette then dust them with nutritional yeast before putting in the oven. So good.
I’m not really a kitchen gadget person, but I picked up a Misto at BB&B and I love it! Especially for my krispy kale. Fill the Misto with your EVOO and spray a fine mist on the kale, add salt and pepper – no icky touching involved. Comes out crisp and less calories from the oil, too.
Hey Brent & Josh, these kale chips rule! Thanks for posting them.

Glad you like them, Ken
One of my favorite new addictions, thanks for sharing guys!
I just picked up a bunch of kale from my local farmer on Friday so I will make this recipe today! Can't wait to try it.
The best seasoning for kale chips! Alder Smoked Fine Salt, it's available at Hannaford nothing else compares and most kids will eat this!
Apple Cider Vinegar! A few sprinkles with the oil. Flaky salt sprinkled when it comes out of the roasty oven. MMMMMMmmmmmm Thank you for the reminder! My kids used to love this!
I absolutely love these….I have been making them for the past few years. They are seriously addictive!!! Great snack….so quick & easy.
There has to be an untold secret! I have followed several different recipes for Kale crisps with the same results… yuck!
Make sure the kale is absolutely dry when you toss it with olive oil. Here in the Pacific Northwest, I notice that any moisture has to be removed most carefully. Didn’t experience this as much in the drier Midwest.
Also, if you don’t like kale other ways, you won’t suddenly like kale.
I have to try that. I saw Rachael Ray use the same method last week except she put her Kale under the broiler and the use the crunchy kale as a topping for a pasta dish.
As I opened this to read it, I had just put 4 trays of kale and seasonings in the dehydrator to dry. Funny how that happens sometimes.:)
