SUMMER SQUASH HAS NEVER BEEN A FAVORITE. WHY? The world population of zucchini is just too great!  You can’t eat enough or give enough away.  Even though we grow zucchini for the sake of completeness, we tend to favor yellow squash (my sister can eat her weight in deep fried squash) and the beautiful patty pan.

Eating squash is good for bone health.  Squash are a good source of calcium and also magnesium, phosphorous, manganese and copper—all important for helping the body build strong bones.

    The squash in that photo is the lemon summer squash. Pick the squash when it is about the size of a lemon. Great when sauteed.
