Cinnamon Sugar Muffins

As Brent (and my mother) can probably tell you, I am not a morning person.  In fact, Brent likes to call attention to this when I shuffle into the Beekman kitchen on shoot mornings and head straight for the coffee pot, without offering so much as a “hello” first.

When I was a teenager, one of the tricks my mom developed to rouse me out of bed was to make a slice of warm, buttery, cinnamon sugar toast and set it just out of reach on the windowsill in my bedroom.  As much as I loved my cocoon of warm blankets, the smell of breakfast would eventually win over, and it wasn’t long until I was ready to start the day.

The memory of that morning treat inspired me to create these muffins, which I secretly hope Josh will whip up in the Beekman kitchen on our next shoot and therefore allow me to be slightly more agreeable in the early hours of our work day.

Cinnamon Sugar Muffins

Ingredients

Softened butter for muffin tin

2 cups all purpose flour

1 tsp baking soda

½ tsp cinnamon

½ tsp nutmeg

1/8 tsp salt

2 extra large eggs

¼ cup canola oil

¾ cup sugar, plus extra for muffin tin

¼ cup brown sugar

¾ cup sour cream

¼ cup buttermilk

1 tsp vanilla extract

for topping

1 cup sugar

2 Tbsp cinnamon

¼ cup melted butter

Instructions

1. Preheat oven to 350 degrees.

2. Butter muffin tin and sprinkle each cup with sugar, being sure to coat all sides.

Using this method, muffins will slide out easily without the need for wasteful paper liners

3. In a bowl, sift together flour, baking soda, cinnamon, nutmeg, and salt.

4. In a separate bowl, whisk together eggs, oil, sugars, sour cream, buttermilk and vanilla.

5. Fold the flour mixture into the wet ingredients until combined.

6. Using an ice cream scoop, fill each muffin cup.

7. Bake 18 – 22 min.

8. When the muffins come out of the oven, melt butter in a saucepan.

9. In a separate bowl, mix cinnamon and sugar.

10. When the muffins are cool enough to handle, brush the tops with melted butter, and then dip into the cinnamon sugar mix.

    Made these muffins this morning. They were yum and my 18 year old son ate a ton. Will definately make them again. I always keep a shaker of cinnamon sugar that I mix up in my cabinet so I melted the butter, poured a small ladel on top of each one and that shook away with my the cinnamon sugar. Have to say it was delicious because the butter absorbed way down into the muffin. Close your ears Dr Brent but I looooooove butter.

    I love butter, too. I think when you eat real food that you naturally eat less because you are more satisified

    This looks wonderfull, have to run out for the buttermilk, was thinking of adding Chocolate chips, (Sorry Dr. Brent), it was a day from heck! Will toss in fresh Blueberrys instead!
